CLASSIC BASIL PESTO RECIPE (Pesto alla Genovese)

Ingredients:


2 C packed basil leaves

2 Tbsp pine nuts

2 garlic cloves*

½ Tsp coarse sea salt*

½ C extra virgin olive oil, divided

¼ C grated Parmagiano*


Instructions:


Gather all ingredients and one-half of the olive oil and place in blender. Begin blending until ingredients are finely chopped. Continue blending and drizzle balance of olive oil until consistency is creamy and smooth. You may need to add a bit more or less oil to obtain that consistency. The color of the sauce will turn a paler green. Do not cook sauce. Serve over hot pasta.


*Use more or less for personal preference

Note: Some people prefer to lightly roast their pine nuts
